Flapjacks take two

Second attempt today, followed a different recipe with lots more of everything it seemed. Wasn't 100% sure how long to cook them but they looked ok when they came out. But this time maybe not dry enough. Taste test was a little too buttery for me so next time is less butter. Soon I will have them perfect.

I like this making my own snacks, what shall I try next?

  1. try a fruit loaf. easy to bake and carry whilst out. and you can pretty much put anything in them

  7. I'm unlikely to get a chance to bake anything. Too tired now, working all day tomorrow and sorting bike ready for the race in the evening :(

  9. I make a lot of cakes for riding. I like this one a lot cos it's all fruit and tastes good. I also play around with the fruit I put in and have done it half flour half oats. It's all good. It's called Amazing Cake as has no eggs and no butter / oil.

    Oven 160° Gas mark 3
    2 8 inch tins, greased lined

    1 lb stoned dates or date paste (easier)
    8 oz sultanas
    8 oz raisins
    5 oz currants
    8 oz chopped apricots
    5 oz wholemeal flour
    5 oz plain flour
    4 teaspoons baking powder
    1/2 teaspoon mixed spice
    1/4 pint orange juice
    zest 1 orange and 1 lemon
    flaked almonds
    1 pint very hot water

    Pour boiling water over dates, leave to soften and form a paste. Mix in all ingredients. Put into tins and top with almonds. Cook for about an hour, may be 45 mins or a bit more, just check this.
